Welsh cakes are incredibly simple and use stirecupboard ingredients so why not have a go??
This isn’t a scientific recipe, I’m incredibly lazy so I cut out as many of the messy bits as possible and with three small boys I didn’t have time to sieve blinking flour!
8 oz self raising flour
2oz sugar ( pref golden castor )
4oz marg or butter
1 or 2 handfuls of sultanas
1 or 2 eggs depending on mixture
Vanilla sugar for sprinkling
-Rub the margarine or butter into the flour. ( or use a mixer )
- Add the sugar, sultanas, egg and mix.
This should bind together, but if too dry add another egg or splash of milk.
- Roll out on a floured surface to about 2cm thick and cut with cookie cutters, or if lazy like me just pinch into 2” balls and flatten out into little patties.
Cook on a greased griddle pan or non stick frying pan , on a medium heat for about 4 to 5 minutes each side.
The exact cooking length is tricky to advise as it depends on heat and pan but as a guide they should feel spongy, but not wet to the touch (no mixture should come out of the middle).
- Once cooked dust but still warm sprinkle with vanilla sugar
